There is a downside to gravity bleeding, all that dirty old contaminated brake fluid that is in the abs actuator/motor is still there. Gravity does not have the power to purge/change what's stored there. IMO pneumatic pressure bleeding is the only way to bleed brakes now a days, even if you require a scanner hooked up in brake bleeding mode it can normally be bypassed through pressure bleeding. Also would never use the old pump/hold it down technique as have witnessed too many master cylinder related issues afterwards caused by the piston travelling past its normal travel inside the master.
One of the main reasons brake fluid is changed apart from what ####'s said is to stop your brakes from corroding inside out, hence why brake fluid is hygroscopic, it absorbs the moisture/water content that finds its way into the hydraulic system, hence most manufacturers recommend bi-annual or annual change out of brake fluid.
